Pumpkin chilli
Pumpkin Chilli
1 medium onion
3 cloves garlic
1 tbsp olive oil
1 can sweetcorn
2 cans kidney beans
1 can chopped tomatoes
250ml pumpkin (steamed and blended)
1 cup beer
1 tbsp smoked paprika
2 tsp chilli powder
Salt & pepper to taste

Roasted pumpkin seeds

Pumpkin seeds with their shells on are too chewy to enjoy raw. But roast them up and they become crispy and irresistible.

Preheat oven to 180°c.

Separate the seeds from the pumpkin flesh and strings. Wash the seeds and dab dry with a paper towel.

Toss seeds in a bowl with a little oil and soy sauce. Spread the seeds thinly on a baking tray and bake for about 10 minutes.
